Prune Chiffon Pie 2014-01-04 16:05:20 Write a review Save Recipe Print Ingredients 1 envelope plain gelatin 1/4 c. water 3 eggs, separated 3/4 c. sugar 1/2 tsp salt 1-1/2 tsp lemon rind 5 TB lemon juice 3/4 c cooked prune pulp Instructions Soak gelatin in 2 TB of water, set aside. Combine slightly beaten egg yolks with 1/2 c sugar, salt, lemon rind, lemon juice and 2 TB water Cook in double boiler until mixture thickens Add gelatin and stir until dissolved. Add prunes Cool until mixture begins to thicken. Beat egg whites until stiff Add 1/4 c. sugar Fold in gelatin mixture Turn into baked pie shell and chill until firm Garnish with whipped cream
