  1. 2 ea Ducks, fully dressed
  2. 3 T self rising Flour
  3. 1 T Lard
  4. 1/4 c self rising Flour
  5. 2 c Water
  6. 1/2 t Salt
  7. 1 dash fresh cracked Black Pepper
  8. 1 ea Apple, quartered
  9. 1 ea Potato, cubed
  10. 1 ea Onion, quartered
  1. Lightly Salt and Pepper inside cavities of Ducks.
  2. Roll birds in 3 T of Flour to coat.
  3. Melt Lard in 6qt dutch oven and brown birds well on all sides and remove to platter.
  4. Add the 1/4 c Flour to drippings and cook till browned.
  5. Remove from heat and cool slightly.
  6. Add Water, Salt and Pepper and return to heat. Cook and stir till thickened.
  7. Place rack in bottom of dutch oven, stuff cavities of Ducks with Apple, Potato, and Onion.
  8. Cover and bake at 325° 3 1/2 to 4 hours.
