  1. rind from one watermelon
  2. 2 qts water
  3. 6 TB salt
  4. 4 c sugar
  5. 2 c white vinegar
  6. 6 cinnamon sticks
  7. 27 allspice & clove
  1. Peel and cut rind into 1" cubes
  2. Soak overnight in salted water
  3. Drain and cook in fresh water until tender
  4. Drain again, set aside
  5. Tie cinnamon, allspice and cloves in cheesecloth or large tea holder
  6. Add spices to a kettle with sugar and vinegar
  7. Heat to boiling
  8. Add rinds to syrup
  9. Simmer 45 min or until transparent
  10. Pack rinds into hot jars
  11. Cover with boiling syrup
  12. Seal, using water bath canning method
