Citrus Orange Pie
Recipe from Mrs. Peck - published in 1880, by A.M.Warren, Plattsburgh NY. Third printing of Champlain Valley, NY Cookbook. Recipes compiled by young ladies of Trinity Church.

  1. 1 lg orange (grate rind and save juice)
  2. 3 eggs (separated)
  3. 1 cup sugar
  4. 1 cup milk
  5. 1 under crust
  1. Bake undercrust in med oven 15 mins and cool
  2. Grate the rind of the orange, then juice orange and reserve rind and juice
  3. Whisk egg yolks with sugar
  4. Add orange juice and rind gratings to sugar
  5. Mix together
  6. Beat egg whites to light froth
  7. Stir in milk and whites to above ingredients
  8. Mix all well
  9. Pour into crust
  10. Bake at 350° for 30 mins (until barely set)
  11. Cool 20 minutes
  12. Refrigerate at least 3 hrs prior to serving
