Prune Chiffon Pie 2014-01-04 16:05:20 Write a review Save Recipe Print Ingredients 1 envelope plain gelatin 1/4 c. water 3 eggs, separated 3/4 c. sugar 1/2 tsp salt 1-1/2 tsp lemon rind 5 TB lemon juice 3/4 c cooked prune pulp Instructions Soak gelatin in 2 TB of water, set aside. Combine slightly beaten egg yolks with 1/2 c sugar, salt, lemon rind, lemon juice and 2 TB water Cook in double boiler until mixture thickens Add gelatin and stir until dissolved. Add prunes Cool until mixture begins to thicken. Beat egg whites until stiff Add 1/4 c. sugar Fold in gelatin mixture Turn into baked pie shell and chill until firm Garnish with whipped cream

Sift Flour before measuring, sift again. Beat Egg Yolks adding sugar gradually until thick and light in color, add Vanilla and Pineapple Juice Beat in Flour and Baking Powder. Fold in stiff Egg Whites. Bake 1 hour at 350°
